How about a great chicken stuffing made from this heavenly focaccia from Old Evropa Bakery and Faranda Vegetables
1 Piece of focaccia - approx
1 Onion finely diced
1 Clove garlic finely diced
6-10 Sage leaves depending on size chopped.
2 tablespoons butter
Salt / pepper for seasoning.
Heat butter in pan until melted, add onions, garlic, salt / pepper, and saute until soft, you don't want to brown the onions, add sage and keep cooking in a low heat for a minute of two.
Leave to cool down.
Break up focaccia into a bowl into chunks, add onion mix when cooled.
add 2 eggs and mix until well combined. Put stuffing into chicken, and roast your chicken.
or just shape on baking paper, wrap up and then wrap in tinfoil and bake for about 20 minutes.
